Swedish Tomato Salad

Also known as Tomatsallad. Garnish with lettuce or celery tops. Makes 4 servings.

SERVES 4 (change servings and units)

Ingredients

Directions

  1. 1
    Peel tomatoes, slice thin and arrange on a serving plate or on individual salad plates.
  2. 2
    Sprinkle tomatoes with salt, pepper, scallions and parsley.
  3. 3
    Mix mustard with vinegar and sugar; gradually stir in sour cream. Taste for seasoning.
  4. 4
    Spoon dressing over tomatoes. Lift tomato slices around so the dressing penetrates all slices.
  5. 5
    Chill a few hours before serving.

Made this salad and brought to our weekly Sunday family dinner. It was a hit! I used half dill and half parsley.

    What a delicious dressing! It's such a fresh tasting salad with the scallions and celery tops (had to use the celery tops, since in my Scandinavian family we never waste them!) The hint of mustard in the dressing is so different and good. This easily scaled down to one serving, although after tasting it I know my kids would have eaten it too. Thanks for sharing this one!

    This is sooooooo OMG sooooo good!!!! My eyebrows were raised while making the dressing but it is fabulous!! The whole dish is delicious! I used dill & a bit too much scallion because I like it that way! Thanks for a great recipe!!
