Swedish Beetroot, Horseradish and Apple Salad: Rodbetsallad

Recipe #235226 | 5 min | 5 min prep | add private note
French Tart

Jun 16, 2007

An absolute "must" as an accompaniment to the Swedish Smorgasbord, this salad is very easy to make and is delicious with cold meats, fish, potatoes and open sandwiches.

SERVES 6 (change servings and units)

Ingredients

  • 250 g pickled beets, cubed
  • 2 pickled gherkins, cut into small pieces
  • 1 apple, peeled cored and cubed
  • 1-2 teaspoon grated horseradish root
  • 200 g sour cream
  • 2 teaspoons chopped fresh dill

Directions

  1. 1
Mix all the chopped vegetables and fruit together - making sure that they are cut into a similar size.
  2. 2
Stir the grated horseradish into the sour cream - bit by bit, checking for taste after each addition.
  3. 3
Then add the chopped vegetables and fruit to the horseradish and sour cream mixture.
  4. 4
Put into an attractive serving bowl and sprinkle with chopped dill.
  5. 5
Serve with the Smorgasbord, or with cold cuts, quiches and pickled fish. Also wonderful to take on a picnic.

Pickles and horseradish are the keys to the wonderful flavour of this salad. I made two little adjustments. I only had baby cornichons, so used 15 of those to equal two gherkins. In the absence of fresh horseradish, I used 1 heaped tablespoon of the bottled stuff. So easy to make, so tasty, so pretty on the table. My Scandanavian exchange students would approve. So should everyone else. Thanks so much, French Tart.

We all enjoyed this dish, especially Our family members born in Russia. Because of its delightful color, I served this as a side dish on Christmas Day. However, I added more apples, beets and pickles because I found the sour cream to be overwhelming. Next time I think I will add a little onion and some pecans.

Haven't had this for years. Gave me a wave of nostalgia for my home country. Easy to make and so tasty. Great. Used a Granny Smith apple and increased the horseradish to one tablespoon (personal preference). I always have a piece of horseradish in the freezer and grate it straight from the freezer. (less tears.......) Will certainly make again. Thanks for posting.
