Sunshine Salad

If you like sunshine and oranges you will love this. Perfect for potluck and special dinners.

SERVES 6 (change servings and units)

Ingredients

Directions

    Mix cottage cheese, crushed pineapple, oranges and whipped topping.
  2. 2
    Sprinkle gelatin over top and fold in well.
  3. 3
    Refrigerate for at least 2 hours or overnight.
  4. 4
    To make it pretty, use a large ice cream scoop or mold in muffin cups greased with mayo and serve on lettuce leaf.

Delicious! In the future I will use Fat-free cottage cheese & fat-free cool whip. I may even add some marshmallows!

    This is a simple recipe that can be prepared without the mandarin oranges and with cherry jello. It is very popular at potlucks in my area and always a crowd pleaser.
