I used to eat this all the time as a kid and just ran across the recipe again in a church recipe collection cookbook. I'm not a huge fan of gelatin salads,(they always sound kinda funky) but this one, I like. A little tart, a little sweet.

SERVES 8 (change servings and units)

    Dissolve jello in boiling water.

    Add pineapple, with juice, and lemon juice.

    Add carrots.

    Chill until set.

I really liked this Kim! I also like the name because of the colours. You can't really taste the carrot in this so it would be a good way to sneak them in for kids. Also, it would also be nice with pineapple tidbits if you like "chunkier" food. Made for PRMR. Thanks!

    Boy, is this a trip down memory lane for me. I haven't had this salad in years and now I wonder why...it is so colourful on a plate, is easy and can be made ahead of time, and everyone loves it. In my house, for fancy, my mother used to put some toasted sliced almonds (the wafer thin ones) on the top before the jello-o set, and that little bit of crunch made it gourmet for me. Thanks for posting this dear recipe I had all but forgotten.

    I've been eyeing this salad for a long time and it's even been in my salad cookbook a long time too, so I was very happy to tag it in PRMR and finally get a chance to make it. If you love carrots, you will love this recipe. A definite summertime delight! Thanks for sharing the recipe.

    This was very tasty and refreshing. I wanted a cool salad option to serve with my Easter meal, and this fit the bill quite nicely. My daughter especially got a kick out of this salad that seemed like a special dessert treat. Thanks for sharing a bit of your family traditions with this recipe.
