Summertime Cucumber and Cottage Cheese Salad

My grandmother used to make this healthy summertime salad to help use up extra cukes from the garden. My husband works outside and loves coming home to this during the heat of the summer. The cottage cheese and mayo can be subbed with low fat for a healthier version.

SERVES 4 -6 (change servings and units)

Directions

    Dice cukes and onion into small pieces.
  2. 2
    Mix cottage cheese, cukes, onions, mayo and salt/pepper in medium mixing bowl.

    Refrigerate for at least 30 minutes.

I made this over the weekend and used it over a bed of lettuce and it was very, very good. I used cucumber, roma tomato, celery and frozen peas, so I did add more to it, but it was fabulous with those little baby peas in there. Thanks for a great idea!

    Very good! I used pickling cukes, low fat cottage cheese and Smart balance mayo as that is what I had on hand. Spring has sprung in NE and I couldn't resist an opportunity to use the chives coming up in my garden so I used those in place of the onion. Regular mayo and cottage cheese rather than low fat would probably earn 5 stars HOWEVER .... We all must make choices

    Very easy and good! Can't wait to make this for my dad, I think he will love the change from plain cottage cheese. Do let the flavors meld, if you can wait! Thank you for sharing. Made this for Spring PAC 09.

    This is so simple and very good. I reduced the servings now to 1 and divided it among 2 plates of mixed greens for a delicious salad with dinner this evening. Made for PAC Spring 2009
