What a fabulous hot weather soup!
So easy to prepare, so refreshing and tasty on days when you're hungry but don't even know quite what you feel like eating and don't know that you really have the energy to make anything anyway. The only change I made was to omit the fresh chili pepper (personal taste preference). My recommendation is that you make this the night before super-hot days and consume it throughout the day.
