With heat from fresh ginger and a chili. Summer freshness at its best! Organic is the way to go. Be sure to wash and drain well.

SERVES 4 -6 (change servings and units)

    Place half the watermelon in a blender with lime, lemon, mint, and chili blend till smooth.

    Mix fruit in a large bowl top with juice mixture.

    Chill till very very cold.

    Garnish with mint!

What a fabulous hot weather soup! So easy to prepare, so refreshing and tasty on days when you're hungry but don't even know quite what you feel like eating and don't know that you really have the energy to make anything anyway. The only change I made was to omit the fresh chili pepper (personal taste preference). My recommendation is that you make this the night before super-hot days and consume it throughout the day. Great blend of flavours. Thanks for sharing another super recipe, Rita! Made for Newest Zaar Tag.
