Sugarless Fall Harvest Cookies

A delicious sugarless cookie filled with dates, raisins, apples and nuts. You won't miss the sugar! From the " Cooking with the Horse and Buggy People" cookbook. I have edited the recipe to include draining the fruit after "plumping". Thank you Paula!

SERVES 24 , 2 Dozen (change servings and units)

Ingredients

    Preheat oven to 350 Degrees F.
  2. 2
    Simmer the dates, apples, and raisins in 1 cup of water for 3 minutes to soften and "plump".
  3. 3
    Cool and remove fruit from liquid. Discard cooking water.
  4. 4
    In a medium bowl, combine flour, baking soda, cinnamon, and salt. Set aside.

    In a large bowl, cream together eggs and shortening. Add vanilla.
  6. 6
    Stir in cooled date mixture.
  7. 7
    Add dry ingredients and mix well. Stir in nuts.
  8. 8
    Chill for 15 minutes.

    Drop by rounded tablespoonful onto a lightly greased cookie sheet.

    Bake about 10-12 minutes or until nicely browned.

    Store in a cool place.

These cookies were okay. They seemed a little dry to me. I think more raisins might have helped? Not sure if I will make them again but what can you expect from a healthy cookie? So as far as healthy cookies go it was good.

    we took paulas idea and added it to these cookies. Also added a little splenda...about 1/4 cup and a handful of chocolate chips. It was a big hit here. Thank you Brenda

    These cookies are definately packed full of fruit and nuts. The recipe did not call for draining the fruit and the dough was a little wet. I was able to save the dough by adding additional raisins, nuts and about 1/3 cup flour as well as chilling until very cold. The end result was a soft cake cookie filled with delicious fruit and nuts.

    My husband is diabetic so I'm always so glad to have a sugar free recipe to try. So many times they end up being a disappointment — BUT NOT THIS TIME! I followed the directions exactly — but I'm thinking the next time I might throw in a few diced dried apricots. Nick's Mom — my husband thanks you for posting this recipe!!
