Sugar Snap Peas/Cauliflower Steamed over Diced Tomatoes

This is a great vegetable side dish I came up with and turned out awesome! My wife couldn't believe this was all I did!

SERVES 2 -3 (change servings and units)

Ingredients

Directions

    Place can of tomatoes in bottom of vegetable steamer and heat on med until it starts steaming.
  2. 2
    Add the fresh veggies, salt and pepper to taste and steam on low until cauliflower is just past the crispy stage.
  3. 3
    Pour Peas and cauliflower in bowl and top with tomatoes.
  4. 4
    Give a quick mix and serve!
