A great vege side for a roast or grill. Regular potatoes cna be used for this dish or a mixture of kumera and potatoes

SERVES 3 -4 (change servings and units)

Ingredients

  • 500 g kumara, peeled and chopped (1 lb)
  • 2 tablespoons oil
  • 2 tablespoons sugar
  • 1/2 teaspoon ground sea salt

Directions

  1. 1
Add the peeled and chopped kumera to a saucepan of boiling water. Boil for 10 minutes, or until just tender. Drain.
  2. 2
Heat the oil in a frypan. Add the sugar and stir over a low heat until lightly golden.
  3. 3
Add the kumera in a single layer and cook until evenly coated with the glaze and heated through. Be as gentle as possibe when moving the kumera (this is to keep it looking in good shape) Shake the pan regularly to keep the kumera from sticking to the pan.

Ace, matie! I sauteed red onion before putting in the sweet potatoes. I also added 3/4 teaspoon of rosemary. Next time I will not pre cook the sweet potato instead just do a raw fry approach. Served with Melt in Your Mouth Lemon Chicken, Peas With Lemon and Tarragon, and Light Pineapple Mousse. Thanks **Jubes** for sharing. Made during ZWT5 for the Chow Hounds.

Ok, maybe I'm a bit weird but I LOVE sweet potatoes. I've been eating them for a week straight and I happen to really like this recipe. I used my last 3 baby sweet potatoes (that's how they sell them at Trader Joe's.) I love the little zing of salt to counteract the sweetness of the sugar (I used honey.) Made for ZWT 5.

Yum, simple and wonderful side dish! I made these last night and we all really enjoyed it. Used it as a side dish with lamb chops for hubby & Little Miss (DD) and chicken kebabs for me. We all enjoyed the sweet potato, I kept to the recipe, didn't change a thing. Thank you **Jubes**

This makes a lovely side dish and tarts up veggies nicely for a dinner party! I used brown sugar for a more caramelised flavour and I added some carrots because I didn't have enough sweet potato on hand. A sprinkle of nutmeg is very nice, too. Thanks for a keeper!
