Stuffed Meatloaf

This is a different twist on meatloaf and it makes a wonderful difference. My husband, who is not a meatloaf fan, loves this one.

SERVES 6 (change servings and units)

Ingredients

Directions

    Beat eggs, milk, ketchup, salt and pepper in a large bowl.
  2. 2
    Add the beef and mix well.
  3. 3
    Put half of the meat mixture in a 9" x 5" x3" loaf pan; set aside.
  4. 4
    Saute the mushrooms and onions in butter for about 3 minutes.
  5. 5
    Add the breadcrumbs, parsley, thyme, salt and pepper.
  6. 6
    Saute until the breadcrumbs are browned.
  7. 7
    Spoon the breadcrumb mixture over the meat mixture and press down gently. Place remaining meat mixture as top layer.

    Bake at 350 for about 1 hour or until no longer pink.

Yes, my mistake. You are to place the other half over the stuffing mixture. Simple error, but doesnt take a rocket scientist to figure out.

    Step 3 calls for putting HALF of the meat mixture in a ". . . pan; set aside." None of the subsequent instructions specifies what to do with the other half of the meat mixture. We can guess or suppose that it becomes the third (top) layer over the breadcrumb layer, or we can make other choices. I have made this twice now, and I chose to mix everything together, and not to layer it. The recipe should, however, specify clearly and explicitly the submitter's intentions.
