I have never cooked a whole steak in the crockpot before and we all thought this was great. I followed the recipe except I cut the Dijon Mustard back to 1 Tbsp as my son hates mustard. (He went back for seconds so don't tell him about the mustard.) I used Brown Gravy Mix as a substitute for the brown gravy mix. The gravy is just delicious. I will definitely make this again. This recipe was great! The steak turned out moist and shredded nicely which my kids loved (they don't like meat that they need to chew a lot). The gravy was yummy, the leftovers reheated nicely, and it was a crock pot meal (YEA!) I served with mashed potatoes and steamed beans. Will make this again!!!!

Excellent! Be sure to pound out the flank steak to a thin rectangle before stuffing and tying. Liked the mustard-dijon flavor, but not everyone might...

The flank steak was wonderful, very tender and ever so tasty. It was perfectly seasoned, and it cooked quite well in the crockpot. But I'm still not sure if the Dijon mustard was too much or simply not a good match for the seasoned stuffing mix I used, because the cooked stuffing was too "mustardy", at least for our taste buds. I will make this again though, which I wll reduce the Dijon to just 1 tablespoon to see if that works better for us. This is definitely a "keeper" recipe, that's for sure.
