Stuffed Beef Tenderloin

I got this recipe from Paula Deens TV Show! It is SO good and easy to make! Enjoy!

SERVES 4 , 4 Beef Slices (change servings and units)

Ingredients

Directions

    Preheat the oven to 400 degrees.

    Saute the shallot, 2 tbsps butter, and 1 cup of button mushrooms.
  3. 3
    Butterfly cut the beef tenderloin.
  4. 4
    Coat the beef tenderloin with soy sauce and salt and pepper the beef.
  5. 5
    Cool down the mushroom and shallots in the fridge as not to cook the inside of the beef.

    Once cooled place the mushroom and shallot on the beef.
  7. 7
    Fold over the beef and tie up with cooking string.
  8. 8
    Cook the beef at 400 degrees for 40 minutes.

    Slice and Enjoy.

Really easy recipe to prepare and lets the meat shine as opposed to overpowering it. Cooked based on thermometer vs. time. Will repeat--great leftover too!
