My boyfriend absolutely loves my version of the standard bacon, lettuce and tomato sandwich! We eat them at least once a week. Easy to make, tastes great! Perfect for summer meals when it's too hot to heat up the kitchen with a lot of cooking as bacon can be microwaved if desired.

SERVES 2 (change servings and units)

    Cook bacon, saving the drippings. Remove to paper towels to drain.

    Fry eggs in bacon drippings.

    Arrange all ingredients on toasted bread, dividing evenly to make two sandwiches.
