Strawberry and Stilton Salad

Beautiful, light and tasty! From Cooking Light Magazine.

SERVES 4 (change servings and units)

Ingredients

Directions

    Combine first 4 ingredients in a medium bowl; toss well to coat.

    Cover and refrigerate 1 hour.
  3. 3
    Strain mixture through a sieve into a jar, reserving liquid.
  4. 4
    Set strawberries aside.
  5. 5
    Add oil and water to jar.
  6. 6
    Cover tightly, and shake vigorously.
  7. 7
    Arrange 1 cup greens on each of 4 salad plates.
  8. 8
    Top with 1/2 cup berries, 2 teaspoons dressing, and 1 tablespoon cheese.

    Serve with French bread.

DD and I tried this fordinner along side 440 Main's Jambalya 440 Main's Jambalaya which I made for part of ZWTIII. This recipe is delicious - we had the feta as we couldn't find Stilton today at our local market and didn'twant to travel any further. DD said she wants this again -definitely a keeper,Bev! Made for MAY~nia recipe tag 2007.

    Sounds bizarre but trust me this combination comes through! When it comes to salad I am a traditionalist but this one is a classic and is not to be missed. Try it!

    there were 7 of us at dinner, two of us liked the salad, 2 could not eat it(didn't like it at all) and 3 ate it cause they liked the feta cheese. It is a beautiful looking salad, presentation is wonderful but I won't be making it again.
