Strawberry and Cream Cheese Parfait

This is a recipe from the issue of July 2006 of Coup de Pouce. It looks so fresh and yummy.

SERVES 6 (change servings and units)

Ingredients

    In a bowl, with an electric mixer, mix cream cheese and 3 tablespoon of sugar for 2 minutes or until it's creamy. Add yogurt and mix until the mixture is homogeneous.

    Put strawberries in a large bowl. Add remaining sugar and stir delicately to coat well. Let rest for 5 minutes at room temperature (stir one time).

    In 6 parfait glasses of a capacity of 1 cup each, distribute half the mixture of cream cheese, half of strawberries and half of almond cookies. Repeat with remaining ingredients. Cover with a plastic wrap and put in the fridge for 2 hours. When ready to serve, garnish with roasted almonds.

Yumm Boomette! This is fantastic. I made it just as posted with the exception of using low fat granola instead of the cookies. I also used a non-fat vanilla yogurt. To further reduce calories, we used Splenda instead of sugar. It is a hit and the family is already asking for me to make more! Thanks for posting!!

    This is a great dessert. My kids loved it. DH liked that it wasn't too sweet or heavy. I used strawberry yogurt and cinnamon cookies. I love that it is so versatile as well, fresh mangoes would go great here too. This is something I know I'll be making often. Thanks Boomette. Made for Bevy Tag.

    We used crushed graham crackers in lieu of almond cookies. The cream cheese mixture is so yummy alone, but in a parfait, mmmmm.......

    I just found a great and easy breakfast recipe. I loved this parfait. I used granola in place of the almond cookie. This was so easy and fast to put together. Thanks for another wonderful recipe, Boomette. Made for August, 2008 Bevy Tag.
