Strawberry Pie

What can I say except YUM.

SERVES 8 (change servings and units)

Ingredients

    Set baked pie shell aside.
  2. 2
    Mash enough of the berries to make 1 cup full of mashed berries.
  3. 3
    Mix dry sugar and dry cornstarch well.
  4. 4
    In a medium saucepan,mix sugar and cornstarch mixture with water and berries.
  5. 5
    Cook on medium heat (stirring constantly) till mixture boils and gets thick.
  6. 6
    then boil for 1 minute stirring constantly.
  7. 7
    While this mixture is cooling, beat cream cheese till smooth and softened.
  8. 8
    Spread the cream cheese in the bottom of the baked pie shell.
  9. 9
    Put the remaining WHOLE berries in the pie shell over cream cheese.
  10. 10
    Pour the cooked berries over top and refrigerate till cold and set.

We loved this recipe. As long as you let it cool, it sets up nicely without being runny. I added 1/3 c of heavy cream when I whipped the cream cheese and it was great!

    My dad said it was excellent. My mom thought it was too sweet and runny. My husband thought it tasted very good. I would give it higher marks but I also thought it was runny and did not make the nicest presentation. I feel that the timing to prepare this recipe is incorrect and actually takes longer. The recipe was not clear enough in reference to the strawberries being mashed. To what consistancy? Like mashed potatoes? And how to mash? Fork or blender? For how long? I gave it 3 stars because I felt the recipe could have been a bit more detailed and overall could have been better. I would probably make this again with modifications.

    I tried this recipe and found it to be the best Strawberry Pie I have ever tasted. My mother in-law gave me her recipe and it was very good too.. but after I baked this one...No comparison. I used Real Whipping Cream and spread it over the strawberries after the pie was cooled...Yummmmm!!!

    I left out the cream cheese because I didn't have any and substituted Splenda for the sugar, but it still produced an incredible, fresh tasting pie. Soooo easy - made it in just a few minutes.
