Strawberry Lemonade Concentrate, Bottled

Ahhh! Refreshing homemade Strawberry Lemonade, in bottles, in your cupboard, ready to be mixed with water and served over ice whenever the mood hits you...... first, though there's a bit of work to be done......

SERVES 24 , 6 500ml jars (change servings and units)

    Rinse and drain the strawberries quickly.
  2. 2
    Hull and measure.
  3. 3
    Squeeze the lemon juice and measure.
  4. 4
    You will probably need about 16 lemons, or 24 limes, but buy a few extra as they can vary quite a bit in juiciness.

    Put the jars on to boil in a large kettle, with the water coming up at least an inch over the tops of them.

    Let boil 10 minutes before removing to be filled.
  7. 7
    Meanwhile, purée the strawberries.
  8. 8
    Heat them with the lemon or lime juice and sugar until the sugar is completely dissolved, but do not boil.

    Pour into hot sterilized jars to within 1 cm (1/2") of the tops.

    Seal with lids sterlized according to the manufacturers directions.

    (Generally, boil for 5 minutes.) Process in a boiling water bath for 15 minutes.

    To serve, mix with cold water to taste, about one part syrup to two parts water.

    Serve over ice.

This was very good, I made it as written and the family really enjoyed it. Next time I think I will use only 4 cups sugar and we can add more later if we think it is neded.

    What a wonderful way to preserve the flavour of fresh strawberries and lemons! This lemonade will be appreciated so much in the dead of winter. I recently opened 2 jars to use at a family gathering. After tasting it myself I thought it was a tiny bit tart but I was proven wrong by a 4 year old who drank numerous glasses of the lemonade. I think I will still add an extra cup of sugar next time for my personal taste. Thank you, Jenny, for this recipe which is sure to be on my list of regulars for strawberry season.

    What a great recipe! We've had a bit of rain here in Aus and the strawberry patch went crazy we've been picking up to 10 cups of straberries every 2 days. So I was searching for something to do with them all. I followed the exact recipe and served it to my guests at our Christmas party and on Christmas day, they ALL loved it! I actually had to open up a second bottle. Thanks for sharing it Jenny.
