Strawberry-Cream Cheese Bars

I was looking for something to do with a strawberry cake mix that I had hanging around. I found these in a cookbook, Quick Fixes with Cake Mixes. As the into says "if you like cheescake or pastries with cheese filling, you'll really like these..."

SERVES 12 (change servings and units)

Ingredients

    Preheat oven to 325 degrees and spray a 9 x 13 inch baking pan with vegetable spray or non-stick cooking spray.

    In a large bowl, combine the cake mix, butter and 1 egg; mix well.
  3. 3
    Press the mixture into bottom prepared pan.
  4. 4
    In a medium bowl, beat cream cheese with remaining eggs and sugar until mixture is smooth and well blended.

    Pour the mixture over cake mix batter and bake for 30 to 35 minutes until light brown on top.

    Cool, cut into bars and enjoy.

    very good and rich! made for easter today. i was told i didn't need to bring anything.... so i made 3 and this was one of em. fast to throw together and cook. need a lot of extra minutes for cook time. didn't turn out as fluffy as i would of liked, but the taste made up for it. will use wayyy less sugar next time though! and as many of the other cooks suggested... different cake mixes! Thanks Paula!!

    Wow! I was really psyched to make these yesterday, so I walk to the store and - as is my usual luck - they have absolutely no strawberry cake mixes. None! So, I went with what I thought would be the next best thing (because I'm stubborn, darn it!) and bought a lemon cake mix.Ooh-la-la! Very tasty! Rave reviews from the MEP clan. Try it sometime....

    YUMMMY!!! I made these today because I was bored and had a sweet tooth and a lonely box of strawberry cake mix in my cupboard. So easy and will definitely make again! Not too rich for me And mine turned out like the pic too!
