Wow-this was delicious! I made half the recipe, since it's only DH and myself, used light butter and substituted Splenda for the confectioner's sugar( we're both trying to cut back!). We both loved the big, fresh strawberry taste of this spread.

Made this for a dinner party. Was great with home-made rolls. The recipe was simple, but I had difficulty with getting the strawberrys and the butter to mix well. Bit of a clumpy appearance. My solution, heat for about a minute in microwave and wisked. At this point, it is pretty much melted. After wisking, put in refrig for a few minutes, then wisk again. As the butter cools and is wisked, it forms a nice, solid, well mixed butter that is delightful.
