Moist and delicious. Freezes beautifully.

    Preheat oven to 350 degrees F.
  2. 2
    Grease and flour two 8"X4"X3" loaf pans.
  3. 3
    Combine dry ingredients.
  4. 4
    Make a well in the centre.
  5. 5
    Put strawberries (thawed), eggs, oil and nuts in the well.
  6. 6
    Mix thoroughly into a nice batter.
  7. 7
    Pour into two loaf pans.
  8. 8
    Bake 1 hour at 350 degrees F or until a toothpick inserted in centre comes out clean.

    Cool in pans 5-10 minutes, then remove from pans and cool on racks.

I had a bag of frozen strawberries that I wanted to use up, and found this recipe. I found this easy to make, and the batter was delicious (I had to taste it ). I will say that I found the bread to be a bit heavy. It was very tasty, but a bit too dense for my taste. Made a loaf for my house, and 3 mini-loaves to share with my co-workers too. Thanks for sharing!

    This was a great way to use up frozen strawberries.I omitted the salt and nuts.I added 1 tsp vanilla and 1/2 tsp strawberry extract.

    What can I say!! This was awesome! Incredibly moist and flavorful. I love the subtle hint of cinnamon with the strawberries. I also used fresh strawberries and made (6) mini loaves which I baked for 45 minutes. I will definately be making this again, and trying with different fruits. Thanks!

    A wonderful recipe as always, MaeEast! I did omit the nuts and made a couple substitutions (used whole wheat pastry flour for the white, sucanat for the sugar and used a little bit of applesauce (a couple Tbs) since I was running short on oil.) Turned out just wonderfully. Lots of strawberry flavor and a good moist texture. I do think that next time I might cut down the sugar just a tad- the sweetness was fine, but I think it could have been knocked back just a smidge. Wonderful strawberry flavor and a great simple recipe. I did half the recipe and it worked just great. Thanks for another winner.
