Stove Top Mac-N-Cheese by Alton Brown

This is from Alton Brown's Good Eats show and it's an easy and good mac n cheese recipe to have on hand. You won't be buying the boxed stuff again after eating this. (edited 8/15/2008 - This was initially posted with 3/4 tsp of dry mustard but after making this a few times I agree with the reviewer that said this amount is too much so I've reduced it to 1/2 tsp.)

    In a large pot of boiling, salted water cook the pasta to al dente and drain. Return to the pot and melt in the butter. Toss to coat.

    Whisk together the eggs, milk, hot sauce, salt, pepper, and mustard. Stir into the pasta and add the cheese. Over low heat continue to stir for 3 minutes or until creamy.

Excellent. Don't be afraid of the hot sauce, it's not enough to overpower the dish. Reheats well, too.

    Yum, yum, yum, yum, yum! I wanted to make DH and I hearty dinner before Halloween festivities began and decided mac and cheese would make a great fall dinner. So glad I chose this Alton recipe- easy, quick, a lot tastier than I ever expected! I like homemade mac and cheese but DH prefers the blue box- except this time. We both agreed this recipe will be our standard. Thanks for posting!

    Yummy. I didn't have evaporated milk so I used cream and I sub'd 1/2 cayenne pepper for hot sauce. You definitely need to use the sharp cheddar — mild cheddar doesn't have enough oomf to flavor the pasta. PS.     Very creamy and cheesy! My son had seconds, I was thrilled, he is not generally a mac'n'cheese fan! I didn't add the hot sauce, tho I think DH and I would have enjoyed it, but I was quite generous with the mustard. Extremely easy to prepare, super for nights when you don't have time to cook! A keeper, thanks, ksgillmore! Made for PAC Spring 2009
