Stove Top Coated Baked Pork Chops

This is a great recipe that works well every time!

SERVES 5 -6 , 5 -6 Chops (change servings and units)

Ingredients

    Place stuffing mix in a bowl.
  2. 2
    Lightly salt and pepper chops.
  3. 3
    Dust with flour, dip chops in egg and coat with stuffing mix (really press the stuffing mix into the pork chop) Place chops in a baking dish with about 3 or 4 tablespoons of melted butter or olive oil (both work well!). Bake at 425°F for about 40 minutes, turning once.

    Voila!

My son said these were the bomb! They were crispy, yet moist inside. Very tasty. I used the olive oil and it worked very well. Very nice to be able to get it in the oven and get the sides together without having to watch the pork chops every few minutes. Thanks for sharing this great recipe.

    If you're looking for a quick, crunchy and tasty pork chop dish this may be the end of your quest. I rarely use pre-packaged foods but gave into a tempting clearance price & bought a half-dozen boxes of Turkey stuffing mix. These are easy to make, but I would advise watching your chops carefully after 30 minutes or so. I also would reduce the oven temperature. I did mine at 400F and after 40 minutes they were dark brown and starting to dry out a bit. I would make them again, but add a few seasonings. I'd also bake at 375F. Maybe it's my oven....

    This is such a good idea! I had 5 large chops, so I needed to use two pans. I wanted to use this as an experiment. I put melted butter in the bottom of one, and olive oil in the bottom of the other. Althought both tasted amazing, when I went to turn the chops half way through in the buttered dish, 1/2 of the coating came off. When I went to turn the olive oil dish, ALL the coating stayed on perfectly! From now on I will only use olive oil. I used Cornbread stove top flavor and usually my DH is very good at identifying what I've made but this time he was stumped at what the coating was! Once I told him Stove Top he was pleasantly surprised! I cooked mine for 45 minutes and they were perfect. Served with garlic broccoli.

    5 stars for how QUICK and easy this is to put together and how tender/moist & crunchy the chops turn out. I usually reserve a 5-star rating for something absolutely out of this world, but this one deserves it as the PERFECT weeknight meal. I prep'd the chops & threw them in the oven in about 5 minutes' time, then was able to kick my feet up & enjoy a leisurely glass of wine before making a salad & instant mash potatoes. The chops were tender and the juiciest I've ever had, plus the coating turns crispy during baking. AHHHH! I used the thick (1.5") Costco boneless chops & after 40 min, they were a tad pink inside, so microwaved them for another minute and they were perfection. This will probably become our standard, Thank-God-Monday's-over meal. Super recipe!
