Steel Cut Oatmeal for the Crock Pot

I love the texture of steel cut oats. You can make this the night before and breakfast is ready in the morning. I like fruit additions, but my kids do not, so I've listed them as optional. Also, it may sound like a lot of water, but trust me, I've experimented.

SERVES 3 -4 (change servings and units)

Ingredients

  • 1 cup steel cut oats (DO NOT substitute old-fashioned or quick-cooking oats)
  • 4 1/2 cups water
  • 1/2 teaspoon salt
  • 2-3 tablespoons butter
  • 1/2 cup dried fruit (raisins, prunes, apricots, dates) (optional)

    Place all ingredients in a 2 quart slow cooker. (If you want to make a smaller amount please use a smaller crock pot or crockette. This won't work in a 6 quart cooker).

    Cover and cook on LOW 6-8 hours.

    It might form a "crust" around the outside. Just scrape it down with a spoon and stir.

The only redeeming quality of this oatmeal is that you don't have to stand and stir. Otherwise, it's not worth making. If you really like the texture of properly cooked steel-cut oats this recipe will only disappoint you. It is mushy and flaccid, not chewy. If you put the fruit in at the beginning it disintegrates into the oatmeal. I'd much rather take the time in the morning to make proper steel-cut oats on the stovetop - or cook them the night before and warm them in the microwave. I won't ever be making this again. Yuck.

    This was very good to wake up to. I madet his without the dried fruit. However, when I got up I threw some blueberries in the crock. Added some milk when I served it. Made for the best of 2008 recipes tag game.

    We have another way of cooking steel cut oats. Bring 3 cups water, 1/4-1/2 tsp. salt and 1 cup steel cut oats to a boil. Cover the pan and remove from heat. In the morning, put what you'll eat into a microwaveable bowl and warm it up. Serve with honey or brown sugar. I also like it cold with yogurt and fruit. You can store the leftovers in the fridge. You can also cook cracked wheat like this. Fast and easy; we've been eating it for years, thanks to a recipe from Lehi Roller Mills.

    I loved this! Got up and breakfast was ready. I cut the recipe down to serve 2 and cooked it in my crockette. Right before serving, I stired in 1/4 cup of powdered milk, covered and allowed it to stand for a few minutes. I will be using this again and again.
