This demands 10 stars in my book! I made exactly as written and would not change a thing. Our fillets were on the thicker side and took 5 minutes per side to cook to medium rare. This deserves more reviews than it has!! It was easy to make, the recipe was well written and directions easy to follow. I served with rock lobster tails, twice baked potatoes and steamed asparagus for our New Year's Eve dinner. Hmmmm...our next big dinner will be Valentines, I see a encore here. Thanks for the great recipe!

Wow, this was so good! Despite the seemingly difficult instructions, this was quite easy to make (including the flambe-ing, which I've never done before now). I followed the recipe exactly. The steaks turned out juicy and tender and the sauce is to die for. My boyfriend was impressed as well, he said that it was like we were eating at a super fancy French restaurant! Thanks for the great recipe, Estelle!
