Spinach and Orange Salad

This is a very simple salad that is great all year long, especially in winter when citrus fruits are in season. If you just want an quick salad, look no further. Source: Southern Living, January 1986.

SERVES 6 (change servings and units)

Ingredients

  • 3/4 lb fresh spinach, torn into bite-size pieces
  • 3 medium oranges, peeled, sectioned, and seeded
  • 1 medium red onion, sliced and separated into rings
  • 1/4-1/3 cup French dressing (try one from this site)

Directions

    Wash spinach thoroughly and allow to dry (use a salad spinner, if you have one).
  2. 2
    Combine spinach, orange sections, and sliced onion in a large salad bowl, tossing well.
  3. 3
    Drizzle dressing over spinach mixture; toss gently.

Quick and easy but full of flavor. I added walnuts and dried cranberries. My husband now prefers this home made version over the California Salad at O'Charlies.

    This Salad is seriously tasty and even my boyfriend, who hates vegetables, loved it! I added Feta Cheese for some added flavor and with the chilli vinaigrette recipe, also found on this site, and some chunky bread, one of the best dinners i've had in a long time! Thanks!

    Excellent salad. I used French Dressing for the French Dressing and loved the contrast of the tangy dressing with the sweet oranges. This was a perfect balance of flavors and will be made again and again in my home. Thanks for posting.
