Colorful and a delicious side dish or main dish.

SERVES 7 (change servings and units)

Ingredients

Directions

  1. 1
    In a saucepan, cook and stir onion and garlic in hot oil until tender.
  2. 2
    Add the broth and spinach; cook and stir frequently until the spinach thaws.
  3. 3
    Bring mixture to a boil and stir occasionally.
  4. 4
    Add in couscous; stir to combine.
  5. 5
    Cover, remove pan from heat, and let stand 5 minutes or until liquid is absorbed.
  6. 6
    Add remaining ingredients; stir to combine.
  7. 7
    Serve immediately.

    This was incredible. My husband even liked it. Now that means it's great! Here are some of the different things I did: I used fresh spinach and cooked it down after the onions and garlic (lots) were softened. I also used my own chicken broth that I skimmed the fat. I also added fresh herbs. I minced up parsley, thyme, rosemary, basil. (You can use whatever you like I assume.) As per another reviewer I used toasted pinenuts. I used fresh squeezed lime juice. This is really a delicious recipe. I think it is really healthy too. We ate it warm like the directions said but I can’t wait to see what it tastes like cold. I hope it is good so I can take it in my lunch.

    This was wonderful...I made this for dinner tonight, and everyone just loved it...I made as directed, only I used a bit more onions and garlic than called for, after I added some crumbled feta cheese along with the Parmesan...what a delicious side dish, spinach is one of our favorite veggies, but I have never though of adding it with couscous, what a super combination!...this is a keeper. Thanks Nurse Di for posting, I will make this again...KC

    Wow! This was amazing and so easy to make! I added more garlic and onions, and also added some chopped up chicken thighs for a heartier meal. I used 1/2 cup of parmesan and toasted pine nuts instead of pecans. We'll definitely be making this one again! Thank you for your recipe!
