Spinach Onion Souffle

Fastest, easiest, best-tasting spinach souffle ever. This is how I got my kids to eat spinach.

SERVES 6 -8 (change servings and units)

    Preheat oven to 350.

    Boil or microwave spinach until soft.

    Mix ingredients in medium casserole dish.

    Cover, bake 30 minutes.

This was really terrific, as well as quick and easy. I forgot to cover it and it still turned out fine. The only thing I will do differently next time (besides maybe covering it) will be to mix the onion mix and the sour cream in advance to give the onion time to rehydrate. Even without doing that, though, this is definitely a winner in this spinach-lover's book!

    Try 1 pint of sour cream to make the onion taste milder. Also top with crushed saltines or cheez-its before baking. Make sure you drain spinach well after defrosting and baking uncovered slightly crisps the topping.

    I hate to rate low but I found this dish to be a little too oniony for me. I felt like it needed some cheese or something to help mellow out the onion flavor. Thanks for sharing!
