This is a very easy, very healthy and very yummy recipe from wholesometoddlerfood.com. It's great for kids but I have been asked to make it for adult social events. It shocks people because it is so healthy yet looks and tastes "unhealthy".

SERVES 12 , 12 muffins (change servings and units)

Ingredients

  • 16 ounces frozen spinach, cooked drained and chopped if needed
  • 3/4 cup seasoned bread crumbs
  • 1/4 cup flax seed meal or wheat germ (if you don't have these things add 1/4 cup more bread crumbs)
  • 1 1/2 cups shredded cheddar cheese (you could also try cheddar flavored with sundried tomatoes and basil)
  • 3 eggs

Directions

  1. 1
    Heat oven to 375.
  2. 2
    Lightly coat baking sheet with oil or use a non-stick mini muffin pan.
  3. 3
    Combine all ingredients well.
  4. 4
    Shape into nuggets or spoon into muffin pan and bake for 20-25 minutes. (Turn nuggets over after 15 minutes).

    Serve with Ranch Dressing for dipping.

Fantastic! I also saw this recipe on wholesometoddlerfood first, and they've become a staple in our house. My toddler likes them with ketchup, I like them plain but serve them with ranch if we're entertaining or something. I've also added garlic & onion on occasion.

    These are really good! I used a mini muffin tin, and I wound up with 28 nuggets (maybe my muffin tin is especially mini). I'm going to be making these a lot, I think...they're an easy way to get flax seed into your diet. Thanks for sharing!

    I really liked these, although the kids wouldn't even try them. Lol I made them yesterday for my football party, and they seemed to be enjoyed by most of my guests. I made some ranch dressing, and you're righ, it's a great match. I made a little extra mix, so i could make nuggets for yesterday, as well as 6 muffins, which I will freeze for lunches. I added a little crumbled feta cheese as well. [Made for Fall 2008 PAC]

    Yum! I basically had to stop myself from eating them all since they were made for my toddler! I added a little garlic to mine as well. A baking tray works fine but they did take about 10 minutes longer to cook for me.
