Spinach Feta Orzo

Orzo at first glance looks a lot like rice, but it's actually very small grains of pasta. It cooks quickly, so this recipe comes together fast; a good side dish when making a 30 minute meal.

SERVES 4 (change servings and units)

Ingredients

    Cook the orzo according to package directions.

    Drain.
  3. 3
    Heat the oil in a skillet over medium high heat.
  4. 4
    Add the onion and saute‚ for 5 minutes or until softened, but not browned.

    Add the spinach and saut3‚ for 3 more minutes.
  6. 6
    Toss the onion and spinach mixture with the hot orzo.
  7. 7
    Add the feta cheese, chopped dill and ground pepper and toss well.
  8. 8
    Serve immediately.

Yum! Easy great side dish or quick vegetarian meal Added a lot more feta because I love it (like jrusk). My box of frozen spinach was larger (I think 10oz?), so I used the whole thing. Added canned tomatoes with chilies (as suggested by another), added some squash that I needed to cook (diced), roasted some pine nuts and threw those in there too... DELICIOUS! I'll have to try adding mushrooms since I love those too! Thanks for a great recipe.

    my kids just wolfed this down! we used fresh spinach and my kids begged me to add some mushrooms and garlic, the combo was just wonderful and although we had this as a side dish we all agreed we could easily make a meal out of it. i did double the recipe for the 6 of us.

    This was awesome! The only thing I did differently was add a lot more feta because I love it! Thanks for sharing GeemaUPDATE: See Geema...I can't stop making this. Just wanted to say I added one can rotel tomatoes with chilies and it made the flavors pop even more. WOW!!! I didn't think it could get better
