Spinach Breakfast Casserole!

I tweaked this recipe to give it some pizazz for a Brunch Bridal Shower! It was a huge hit and all the girls wanted a copy! It looks very pretty and it's super yummy!! You don't have to use all of the veggies- but it definately adds to the taste and overall look if you do!

SERVES 12 -15 (change servings and units)

    Preheat oven to 325.
  2. 2
    In a large mixing bowl combine eggs, milk, mustard, and salt; stir well.
  3. 3
    Spread 1/2 of bread cubes evenly in the bottom of a greased 9x13 pan.

    Sprinkle with 1/2 of veggies, ham, and cheese over bread.
  5. 5
    Repeat layering using the remainder of the ingredients(not eggs yet).
  6. 6
    Now- pour egg mixture slowly and evenly over casserole
  7. 7
    Bake for 55-60 minutes or until your eggs are set.
  8. 8
    Serve with a fruit salad for a beautiful brunch!

Family opinion: this was just okay. 8 YO DD picked out the ham and let the rest go. Even DH, who eats just about everything, doused it in hot sauce and said "it's not the best." It was really disappointing b/c it actually took 90 mins to bake - the middle took forever - and we were all starving. Sorry!

    This is delicious! However I did have troubles getting the middle to cook. Also I did half swiss cheese and half cheddar, and no tomatoes (I didn't have any). Very easy to throw together. I prepared it the night before and it baked up great (except for the middle of course).

    So delicious! And pretty easy to put together. I prepared it a day early and it cooked up fine the next day.

    This was excellent! I made it for a ladies brunch and everyone loved it. The only change I made was to leave out the black olives because I don't care for them. Thanks Chelseajoy, for a fabulous recipe!
