Spinach Beef Biscuit Bake

This was one of my first successful cooking experiences. It came from the April/May 1999 issue of Taste of Home. This is a recipe you will want to make over and over again.

SERVES 6 (change servings and units)

Ingredients

    Press and flatten biscuints onto the bottom and up the sides of a greased 11 x 7 x 2-inch baking dish; set aside.

    In a skillet over medium heat, cook beef and onion until meat is no longer pink, drain.
  3. 3
    In a bowl, beat eggs.
  4. 4
    Add spinach and mushrooms; mix well.
  5. 5
    Stir in the cheeses, garlic powder, salt, pepper,and beef mixture; mix well.
  6. 6
    Spoon into prepared crust.
  7. 7
    Drizzle with butter.
  8. 8
    Bake uncovered, at 375 F for 25-30 minutes or until crust is lightly browned.

    Something went very wrong. Biscuit never cooked despite 15 extra minutes. Big, soggy, tasteless mess.

    I will be making this one again! My husband who never tries anything new loved it and even asked to bring some with him on the road with him, so I know it was a hit with him! Thanks much for posting this recipe!

    Delicious all-in-one casserole dish. We really enjoyed the combination of flavors. Used the feta and fresh chopped garlic and drizzled a little extra virgin olive oil over the top rather than butter; otherwise followed this recipe as written. Looking forward to the leftovers for lunch!
