Spicy Vegetable Hummus

I concocted this hummus the other day from a combination of garlic hummus recipes here on Zaar. Since I found it kinda bland, I added a few more spices and the vegetables. I used about a 1/2 cup of vegetables in total. You can really use any combination of vegetables that you want: red pepper, red onion, and celery would also be good!

SERVES 6 (change servings and units)

    In a medium bowl, mash the garbanzo beans to your desired texture with a potato masher. A fork would also work.

    Add lemon juice, tahini, sesame oil, and ricotta. Mix well.
  3. 3
    Combine garlic, spices, and vegetables with hummus mixture (you may want a bit more or less of each of these depending on your tastes).

    Add black and red pepper to taste.
  5. 5
    Serve with pita and fresh vegetables. This is a great veggie dip!

We weren't huge fans, maybe with a little tweaking we could make it fit our tastes but I think we prefer just regular hummus. Thanks anway!!

    I love hummus, and was ready to try something quite different from the regular. For the veggies I used green pepper, carrot, one radish, chives and sweet onion. The combo of the veggies, and the creamier taste and texture because of the ricotta really made this a nice tasting hummus. My hummus could have been a bit spicier, so next time i'll know to add more than a very little sprinkle of red pepper flakes. Delicious with pita chips.

    I have finally come to the conclusion that I am NOT a tahini fan! :oops: I have another hummus recipe that I use peanut butter instead of tahini for. I like the vegetables in this. I used homemade beans and threw it all in the blender, as I like the creaminess of it that way. Added a little oil to make it mix! I reduced the spices and left out the red pepper flakes. I think I would like this more with the p.b. next time, but I will save this to try again. Made this for Tag. Okay, updating to 4 stars bcz my husband DOES like this, even with the vegetables. I guess I'll trade off the way I make it every other time (tahini or PB)!
