Spicy Sweet Potatoes

    In a zip-top plastic bag, toss potatoes and oil.

    Combine remaining ingredients; add to bag; toss to coat.
  3. 3
    Transfer to a greased 11x7 inch baking dish.
  4. 4
    Bake, uncovered, at 400 degrees for 40-45 minutes or until potatoes are tender, stirring every 15 minutes.

    Oh yummy! My husband "doesn't like sweet potatoes" until now! I used 2 sweet potatoes, 1 tsp of olive oil, splenda instead of brown sugar, salt substitute and stayed with the 1/4 tsp cayenne even though I had only 2 potatoes. This is also our, and especially my; favorite sweet potatoe recipe. Thank you very much.

    This is a regular in our home. My family loves these, and the only way my DH will eat sweet potatoes. A nice balance of sweet and spicy. I have usually baked this at 350 degrees, but will try it next time at the higher temperature, which probably gives more carmelization. This is the perfect side dish for grilled meats.
