Spicy Roasted Potatoes

So easy to prepare. Healthier than french fries, these are a good accompaniment to many main courses.

SERVES 4 (change servings and units)

Ingredients

Directions

    Combine mustard, oil, garlic, tarragon, paprika, and pepper flakes.

    Wash potato pieces and pat dry with paper towels.
  3. 3
    Add to spice mixture and toss to coat well.
  4. 4
    Very lightly grease a baking sheet.
  5. 5
    Add potatoes in a single layer.
  6. 6
    Bake in a preheated 350F oven for approximately 35 minutes or until potatoes are tender.

    Sprinkle with salt, if desired.

We were split on these at home ~ DH & DD loved them, but they weren't my favorite way to eat potatoes. I'm not a big mustard fan and I think that's why I didn't care for them that much. I think that I would try these again, but maybe would reduce the amount of mustard.

    This was just yummy! We truly enjoyed this for dinner tonight. Very easy to prepare. I made as posted, but DH had to have with a bit of ketchup. Thanks for posting.

    Good flavourful potatoes. Nice blend of spices with a garlicky edge and a mustardy tang. The only sub I made was to use olive oil. Very easy too.

    I make roasted potatoes fairly often, but have never tried with dijon mustard before. I really like it! I always just eyeball the hebs and spices and now I will keep in mind that I can add the mustard for nice twist
