Spicy Pesto Chicken

Adapted from a Kraft recipe. Wonderful way to use pesto! For a fast supper - it was a hit in my house!

SERVES 4 (change servings and units)

Ingredients

Directions

    Preheat oven to 350°F.
  2. 2
    Mix the mozzarella cheese, pesto sauce and mustard until well blended; set aside.
  3. 3
    Place chicken in 13x9-inch baking dish.
  4. 4
    Spread mustard mixture evenly over chicken; top with parmesan cheese.
  5. 5
    BAKE 30 minutes or until chicken is cooked through.

    I flattened the chicken breasts so that they would bake evnly. Good mixture of flavors; the chicken stayed perfectly moist.

    I used homemade pesto. Me and DH thought there was too much Dijon Mustard. So another time I'll reduce it. But this recipe is very tasty for the little ingredients. And so easy to do. The only problem I got was that my chicken breasts were too big and take a lot of time to cook. Thanks Redsie. Made for Zaar Star Game.
