Spicy Mexican Corn!

This is my family's favorite way to eat corn!

SERVES 4 (change servings and units)

Ingredients

  • 2 (15 1/2 ounce) cans of golden sweet corn

  • 3/4 ounce Laughing Cow cheese, pasteurized cheese (laughing cow three wedges)
  • 1/2 green bell pepper, chopped (or more)
  • 1/2 red bell pepper, chopped
  • creole seasoning, to taste (I use Tony Chachere's)

Directions

  1. 1
    Mix all ingredients in a 2-quart pot and cook on medium heat until done.
  2. 2
    This is spicy so adjust seasonings and peppers to taste.
