Spicy Cold Soba Noodles

I make this quite often. We love it; it has the right amount of spiciness, and you can adjust the spiciness to fit your tastes. We also use this sauce as a dip for spring rolls or egg rolls, or as a sauce for broccoli or other stir fried Asian vegetables.

SERVES 3 -4 (change servings and units)

Ingredients

Directions

    Heat soy sauce until reduced by half.

    Turn to low and add molasses.
  3. 3
    Warm briefly and transfer to bowl.
  4. 4
    Add remaining ingredients except noodles.
  5. 5
    Add salt to taste.

    Boil noodles about 3 minutes.

    Drain and plunge in ice water.
  8. 8
    Drain and rinse.
  9. 9
    Combine with sauce and chill.

Excellent! I added 2 Tbsp of peanut butter and it was perfect.

    Just an idea, or variation: I made this again last week but I didn't have any tahini, so I just added peanut butter to taste (about 3-4 tbs? not sure how much). BF liked it even better that way! And to add texture I added a bunch of sesame seeds. Just wanted to let that be known in case someone can't find tahini

    Delicious!! I did cut down the sesame oil by about half (trying to watch my fat intake) and didn't miss it at all. I added some chopped red pepper for color, as well as some sesame seeds for crunch. I found that the amount of sauce was enough for a whole pound of soba. Fantastic and very simple dish, one I will definitely make again! Thanks for posting!!

    Yummy and my friends enjoyed it. But I think the amount of sesame oil is too high. I used 1 tblsp and it seemed enough to me. I tried it both with tahini and peanut butter. I prefer tahini and it mixed in better. I had to heat the sauce in the microwave to get the peanut butter to mix in with the sauce properly. Very good though!
