Spicy Chicken With Couscous

This is a deliciously spicy low fat chicken dish. You control the spiciness with strength of the curry powder you add. You can even leave out the chicken to use it as a side dish.

SERVES 4 (change servings and units)

Ingredients

Directions

    Heat 1/2 the oil in a frying pan and add the diced chicken.
  2. 2
    Cook until browned and put aside.
  3. 3
    Heat the rest of the oil in the frying pan and add the onions, zucchini, coriander, cumin and curry powder.
  4. 4
    Cook until the onion is transparent and the zucchini is soft.
  5. 5
    Add the chicken and the canned tomatoes and simmer on low heat for 10 minutes.

    Meanwhile prepare the couscous.
  7. 7
    Add the sugar to the chicken mixture and simmer for 2 minutes.

    Serve over the couscous or mix together and serve.

Good... but pretty bland; not spicy enough for our tastes. I added three times the amount of curry (we are curry fanatics) and left the rest of the recipe the same. Thanks for sharing!

    Loved it!!! Small amount of salt but not small on flavor. I mixed the couscous with the chicken and it was a wonderful hearty meal....will make it again. It didn't need a single thing changed to make it better! Thanks Rogue Red!

    Easy and tasty. I doubled the amounts of spices other than coriander (I left that one out just because of personal prefrence) because it was a bit bland for our taste with the amounts listed but a nice blend of flavors.Thanks for a great quick dish.

    Both the hsuband and I agreed it lcked taste, surprising, given the spices in the recipe. I put some hot sauce into the final product to perk it up. This smellsd fantastic cooking, and we both had high hopes that it would taste as good as it smelled. Very healthy recipe, but the taste we hoped for wasn't there for us.
