Spicy Black Bean Burritos

This is a fast and simple supper that you can embellish as much as you want to suit the tastes of your family.

SERVES 4 (change servings and units)

Ingredients

    In a large saucepan, heat the beans, chipotles, cumin and salt and pepper over medium heat, stirring occasionally, until simmering.

    Stir in the green onions and continue to simmer 2 minutes.
  3. 3
    To assemble, spoon about 1/2 cup bean mixture on center of each tortilla.
  4. 4
    Top with equal amounts of the cheese, lettuce, and cilantro.
  5. 5
    Fold bottom edge up over filling.
  6. 6
    Fold right and left sides to center, overlapping edges.
  7. 7
    Serve with the salsa and guacamole.

    Fabulous! I had these with the addition of onions and peppers as suggested, with guacamole!!! I used very little cilantro as im not a huge fan of it in large quantities These are just fabulous though. Loved the addition of cumin and the chipotle in adobo! I was very happy with my meal! Thanks geema!

    A very easy and quick meal to prepare. Great for when you`re short on time. Next time I`ll saute onions, garlic and peppers then add to the beans.
