Spicy Baked Omelet

I wanted something a little different for breakfast this morning and I came up with this one. It's fast and easy and requires no overnight refrigeration time. We really enjoyed the spicy taste the Rotel added.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    Preheat oven to 400 degrees F.
  2. 2
    Spray an 8 1/2 x 8 1/2 in baking dish with Pam.
  3. 3
    Beat the eggs with the salt and pepper until foamy.
  4. 4
    Mix in the cubed ham, Rotel and cheese and mix well.
  5. 5
    Bake in the oven for 25-30 minutes or until the eggs are set (every oven is different).
  6. 6
    Turn the oven off and let it sit another 5-10 minutes.
  7. 7
    Delicious and easy.

We have chickens an always have a ton of eggs to use up. This dish was awesome loved the Rotel tomatoes w/the chilies and the egg dish cooked up perfectly in the oven, I do not eat ham but my dh does, so I mixed everything except the ham and once I poured it into the dish I added ham to half the dish and pressed it down into the egg mixture and added deli turkey to the other half, after cooking we topped it with a little more spice by adding fresh salsa to the top thanks so much!

    We really enjoyed this for a special breakfast. The rotel adds a spicy twist to the omelet. I like the idea of a baked omelet which is a fuss-free way to serve a group of people.

    This was great! I made it today for breakfast and both my husband and I loved it. I think next time I'll add some mushrooms or other veggies to it, but otherwise FANTASTIC! Thanks for the recipe!

    Easy tasty recipe. I have a hard time finding Rotel tomatoes so had to use a fresh tomato and spiced it up with Mrs Dash Chipotle spice. Cut the recipe back to two eggs. Lovely flavor loaded breakfast. I used a low fat Jalapeno Jack Cheese
