Spiced Pumpkin Waffles

These waffles are my kids new favorite waffles. They're delicious! They have a light texture and the pumpkin flavor is not overpowering. The serving size is for Belgian waffles, but they will work fine in a regular waffle iron also.

8 Belgian waffles (change servings and units)

    Mix together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in large bowl.

    In a second bowl, add eggs, sugar, pumpkin, milk, and butter; beat well.
  3. 3
    Gently fold in the flour mixture.
  4. 4
    Cook according to your waffle iron directions.

    I do these in my belgian waffle iron and it uses about 1 cup batter and takes 4-5 minutes to bake.

    They come out a nice deep, golden brown.

    These are great with a little bit of syrup, but would also be great with honey butter.

Just made these for my mom and discovered that either the flour or the milk measurements are off. I always add just half of any liquid to a recipe to mix before adding the rest and was glad I did. I saved the other half of the liquid for another batch tomorrow. Great taste, but would double the spices and maybe add chopped cranberries. The trick to any waffle no matter regular or belgian is to grease the iron well each time. My first on stuck on one corner where I missed the spray oil. Got it all on the rest and them came out wonderful.

    What a great recipe! I loved it. I used whole wheat flour and substituted pumpkin pie spice for all the spices since I was missing a couple of them. I also sprayed my waffle iron with non-stick spray and it worked like a charm! I will be making this again and again! I also used a suggestion from above and made my own honey butter to go with it, couldn't have been more perfect.

    I made these for my husband and 2 children. (7 & 11 yrs old and picky) They were delicious! I did substitute half the flour with whole grain pastry flour but followed rest of recipe. I had one left over which I froze. The next night I divided it in 4 pieces, toasted it and served it with a scoop of pumpkin ice cream. It was wonderful as a dessert even though they are not overly sweet. This recipe scored high with my family.

    Excellent recipe - we just enjoyed them for lunch! Kids love the taste and I love the health benefits (twice the pumpkin and less sugar than most other recipes). My 4 year old (very picky eater) said he’d rather have these than regular waffles. I just made minor changes to the spices based on my preferences – omitted ginger, added a pinch of cloves and reduced nutmeg by 1/2. Also, I used evaporated skim milk and added a scoop of protein powder with the dry ingredients. Even though these are perfect for the fall, I’ll be making them year round!
