Spiced Carrot Salad (Greek)

From Chef on a Shoestring's Greek menu. This sounds heavenly with ground walnuts and mint. Easily scaled down or up. Time does not include one hour sitting time.

SERVES 8 (change servings and units)

Ingredients

Directions

    Shred the carrots.
  2. 2
    Combine the carrots, garlic, walnuts, cinnamon, cumin, cayenne, olive oil, lemon juice and salt to taste in a serving bowl.

    Cover and let stand for one hour at room temperature or in the refrigerator for up to 8 hours.
  4. 4
    Just before serving, toss in the mint and serve.

What can I say that hasn't been said? By using the food processor to do the grating (I grated the walnuts along with the carrot) it takes about 5 mins. I don't have fresh mint but as tasty as this was with the dried I know that it would be even better with fresh. What a great summer side salad.

    I love this salad. The flavors go together so well. I misread the part where it says 'ground' walnuts and just chopped mine. But it was perfect. Gave it an extra crunch. I used less oil and more garlic. Thanks for a great recipe.

    This little salad has a bold flavor. I loved the cinnamon in it. I cut back on the olive oil a bit because I'm trying to cut calories where I can. A great healthy salad made for ZWT4 by a jefe de la Cocina.

    An easy and terrific salad that really is enhanced by the addition of the walnuts - which I also garnished the salad with! I added the Cayenne pepper for the extra kick and we both loved it. I made about a third of this reicpe as there were only the two of us - a wonderful BRIGHT salad for a dull day! Thanks Marra! FT
