This is a quick easy dip that is healthy and light. It is a great recipe to put out, prior to a meal, for guests to pick at or as something to snack on. I made this on the weekend as I had my family over for my sister's birthday. I have also made this along with other dips when I have had 20-30 people over for a party, as something to snack on, while I am getting together the main affair.

1 1/2 cup (change servings and units)

Ingredients

Directions

    Boil or microwave carrots until soft, drain.
  2. 2
    Heat oil in a frying pan cook garlic and spices until fragrant.
  3. 3
    Blend or process carrot, spices, yogurt and coriander until smooth.

    Refrigerate until needed.

    Serve with either homemade dippers or store bought.

    Made as a pressie for the Dec Aussie/NZ Dec Recipe Swap & to create an appy plate for a lite supper last nite, we really liked this recipe for its flavour & the fact it turns a typical dipper into the dippee. I made the dip as written, but did alter the suggested presentation by using Roasted Garlic Butter by Diana #2 on sliced & toasted ciabatta bread. I guess that made it a spread vs a dip, but it was yummy nonetheless. Thx for sharing this recipe w/us. We loved it!

    This was really good dip! Very nice fresh taste. We added some Bragg Liquid Aminos and a little more yogurt to it, and next time I think I might double the amount of garlic. We enjoyed it spread over saltine crackers for an evening snack. Thanks! Made for Aussie/Kiwi Swap.

    This dip is on the light side side- not dense like hummus- and has wonderful flavors. Obviously very quick to make as well. Thanks!
