Spanish Rice

This came from a Betty Crocker cookbook. It's simple and really great.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    Heat oil in 10" skillet over medium heat.
  2. 2
    Cook rice and onion in oil about 5 min.
  3. 3
    Stir frequently, until rice is golden brown and onion is tender.
  4. 4
    Stir in remaining ingredients.
  5. 5
    Heat to boiling, reduce heat to low.
  6. 6
    Cover and simmer about 30 min.
  7. 7
    Stir occasionally, until rice is tender.

My husband, who usually doesn't like spanish rice, loved this but I agree with reviewers that it needs tweaking. I lightened up on the chili powder since I had the hot kind & used onion powder for the onions. Cheddar might hlep for next time & maybe some minced garlic. I will certainly work with this. Thanks!

    This recipe cooked exactly as the instructions indicated. Didn't have as much "oompf" as we like in ours. My elderly father loved its mild taste.

    I've used this recipe, or a similar one for years. Very easy and consistantly delicous. I added some chopped bell pepper to mine. Pam

    I think this is a good place to start when making Spanish Rice but it needs some tweaking. The whole family thought it was weak in the flavor department. Next time I'd add more chile powder and probably some diced peppers or salsa. The recipe worked as described (took exactly 30 minutes) it just lacked "oomph". I finally added some sharp cheddar cheese and sour cream to give it a little more flavor and that was good. Thanks for giving me a starting place for coming up with a Spanish Rice dish for the family!
