Spaghetti Chili

This is a recipe my mother made up. It has been a long time tradition in our family. We called it Poor Man’s Chili because it was thrown together with what we had in our cupboards. As strange as it may sound, spaghetti in chili. It is very tasty and many have asked for this recipe after a potluck. Extremely filling. (it will probably feed more than the serving size says. I wasn't sure so I guesstimated.) LOL! I love this recipe it is one of those that will hit the spot on those cold winter days and it is very quick and easy too. Hope you all Enjoy!

SERVES 4 -6 (change servings and units)

Ingredients

  • 1 1/2-2 lbs ground beef
  • 1 lb uncooked spaghetti

  • 1 (46 ounce) can tomato juice

  • 2 (16 ounce) cans of traditional refried beans

  • 2 (1 1/4 ounce) packets chili seasoning mix (I like it spicer so I use 2 pkgs so depends on your tastebuds)

Directions

    Brown and drain burger.
  2. 2
    Add seasoning to burger according to seasoning pkg directions.
  3. 3
    Cook and drain spaghetti according to spaghetti package directions.

    Return spaghetti to pot and add the tomato juice all of it.

    Add the burger and both cans of refried beans.

    Boil the mixture until it is very well mixed and is thickened.

    Remove from stovetop and enjoy.

    This freezes well and reheats in the microwave easily for you on the go moms.

    It also refrigerates well.

    I like it best the day after. Yummy.
