Southwestern Salad

My mom's favorite dish ever! You may want to add more lettuce, but my mother is more about the "extras" then the greens. These are extra good topped with Toasted Chickpeas With Seasoning Options! Also for chicken I use Parmesan Chicken a lot.

    Poach chicken then shred.

    Mix cooked corn and chicken in a bowl with taco seasoning mix.

    Divide lettuce, beans, tomato, corn and chicken mixture among two bowls.

    Top with salsa cheese and crushed chips.

    Top with ranch dressing if you please.

    You can multiply this recipe to suit your needs!

We really really enjoyed this. Very quick and didn't require the oven. I used leftover grilled chicken, which I shredded, and reheated it with the corn. I omitted the salsa and used Southwesern Ranch dressing from Hidden Valley, and topped the salad with crunched up baked Doritos. I'm really looking forward to having this for lunch tomorrow.

    This was a great salad, I had some leftover chicken and just chopped it up in it...was a great way to use up leftovers...I did use black beans instead of kidney..

    This was easy to make, very filling and oh, so good. The only addition I made was adding some onion. I really like everything about this recipe. I did not use the ranch dressing. I made this for Adopt A Tag II Fall 2008 game

    This was really good. I used precooked southwest style chicken strips so i didn't have to heat up the kitchen. It was awesome. Thank you
