Southern Lima Butter Beans With Ham Bits

These are so delicious you will DANCE AROUND THE TABLE!!! A good southern vegetable dish that goes well with chicken, pork or beef. My family always had a big garden and grew butter beans. We would sit on the back porch and shell beans to put into the freezer. We tried to pick the tinest beans because of their flavor. Now, with a busy life a purchased bag of these beans not only bring back memories, but are popular in our every day meals. Purchase the bag that states "tiny" or "baby" lima beans. They make a pretty dish when having guests. The ham and bacon drippings will provide some saltiness; therefore, use the small amount of salt and give it a taste test.

SERVES 4 -6 (change servings and units)

    Bring water to boil and add beans, ham bits, bacon drippings, salt and black pepper.

    Cook on a low simmer heat for 1 1/2 hours. Some water will evaporate, but let at least 2 cups remain. Check frequently to not let water completely boil out.

My husband is the only one in the family who LOVES lima beans so I cut the recipe in half and made this just for him. My ham was not overly salty so I did add a bit of chicken stock base instead of salt, and a generous dash of dried onion flakes. My husband was in heaven eating this. I was asked to please make this again.....he said 5 stars all the way.

    DH may post his happy dance on You Tube! I used one 1-pound ham steak, which was about 1 1/2 cups after trimming. I cooked 2 slices of bacon to create fresh bacon drippings. Of course, the ham bone circle (minus fat) also went into the pot. DH loves limas, I am not a fan of limas, but these were fantastic! Next time I'm making double! DH is doing a happy dance, because I won't shy away from this recipe. It's so easy, he may start this for me to have an earlier dinner. This is going into my Top Favorites for 2009.     Ohh Yum!! These butter beans are soooo delicious! I had no bacon drippings so subed with butter and used red pepper flakes instead of regular black pepper, about a half teaspoon; also added a clove of garlic. We ate them as a meal with pull apart buns straight from the oven, a real "comfort food" meal!! I will be making them again, thanks so much for posting in the comfort food photo event!!
