South Beach Chicken Skillet

This is a quick and easy meal suitable for the South Beach diet on a week night. The amount of spices listed here give the chicken a very mild kick. This is not a hot dish, although you could make it so if you wished.

SERVES 2 (change servings and units)

    Brush the entire bottom of a large nonstick skillet with the olive oil using a pastry brush.
  2. 2
    Cook the garlic for about a minute over a medium heat then add the chicken, stirring as required to cook all the sides of the chunks.
  3. 3
    Sprinkle the paprika, chili powder, garlic powder, and cayenne pepper over the chicken and stir to evenly coat.
  4. 4
    Add the onion and cook for a minute or two before adding all the peppers.
  5. 5
    Cook stirring occasionally until the peppers are tender and the chicken is done.
  6. 6
    Add salt and pepper to taste and stir well to mix.

Very good and very easy weeknight dish! For my non-dieters who wanted some carbs with dinner, I served this over jasmine rice and it was very well received by all. Thanks for posting.

    This was a quick and easy recipe. My kids and I loved it. I only added half of the paprika and chili powder, as I thought it might be too spicy for the kids. I was wrong, they wanted me to add all of it next time we make it. The chicken with all the spices was excellent! This is going to be added to our bi-weekly meal plans.

    Pretty Darn Good! I served it over rice. And even though mine ended up watery, but that is due to the fact that I thawed my chicken in a brine. I did cut the hot spices in 1/2 because my oldest is a picky eater and claims some pizza's are spicy. In the end everyone ate it up. Thanks for the recipe Pixie!
