Sour Cream Vegetable Salad

The revelation here is the salad dressing (including the dill). Substitute whatever vegetables you like. Sometimes I like to include 1/4 cup sliced radishes or to add sweet yellow pepper and carrots sliced paper thin.

SERVES 4 -6 (change servings and units)

The horseradish is a great addition to this salad. I used grape tomatoes in place of cheery tomatoes. I didn't measure, but I don't think I used quite 1 cup of sour cream (reduced-fat). Thanx for posting. This will be a great summer side dish!

    I usually do something like this, but with only cucumbers and onions. The horseradish gave it a slightly tangy flavor. I like it.

    This was wonderful! I pretty much tripled this recipe and served it at my Easter dinner over the weekend, it was huge success, everyone really enjoyed it! thanks echo, I will make this again!...Kitten

    Very refreshing for these hot Summer days. I used grape tomatoes and they added a great sweetness to this yummy chilled salad! (The pic doesn't do it justice but I tried LOL) I went exactly according to directions. Very good!
