This recipe, which I found in an old Sunset cookbook, is the only one I've found that's as good as our favorite little family-owned Mexican restaurant. . .

SERVES 8 -10 (change servings and units)

Ingredients

    In a large saucepan cook onion and garlic in hot oil until onion is tender but not brown.

    Stir in water, broth and tomato paste.
  3. 3
    Bring to a boil; add potatoes and carrots.
  4. 4
    Simmer 5 minutes.
  5. 5
    Meanwhile combine egg, cilantro or parsley, salt, oregano and pepper.

    Add ground beef and rice and mix well.
  7. 7
    Form into 1-inch meatballs.
  8. 8
    Add, a few at a time, to the simmering soup.
  9. 9
    When all meatballs are added, bring soup back to boiling.
  10. 10
    Reduce heat and simmer about 30 minutes, or until meatballs and vegetables are done.

This was easy to make and was delicious. My DH bragged and had me make a gigantic pot of this for his work.

    This was different than the version I grew up with, but sooo delicious. Easy to put together and almost more of a meatball stew than a soup as the broth was very rich and satisfying. The only change I made was adding some chopped fresh cilantro to the broth as well. DH enjoyed it and he is not a soup sort of guy. Thanks for sharing! I'll be making this again.

    Wonderful soup! Made it in the crockpot after browning the meatballs and removing the grease. Very hearty and satisfying and we both loved it. Only thing I will change next time is to add garlic to the meatballs as well as the soup.
